Pecan Coffee Cake - Gluten FreePreheat oven to 350F and grease a 9 x 13 glass baker

Combine;

* 1 cup chopped pecans

* ¾ cup chopped craisins

* ½ cup brown sugar

* 1 ½ tbsp cinnamon (or to taste)

* 2 tbsp maple syrup

* ½ cup melted butter

spread over bottom of prepared pan

Beat;

* ½ cup oil

* 4 eggs

* 1 tbsp apple cider vinegar

* ¾ cup sugar

* 2 cups vanilla yogurt

Stir together;

* 2 ½ cups flour mix

* ¾ cup potato starch

* 1 tbsp baking powder

* 2 tsp baking soda

* 2 tsp xanthan gum

* pinch sea salt

Stir into wet ingredients & beat for a minute + (add a little milk if too dry& crumbly)

Bake 45 -55 minutes until tester comes out clean.

Invert immediately onto serving plate and drizzle with warm maple syrup if desired.
